PAN-FRIED ASSORTED VEGETABLES PANCAKE

INGREDIENTS :

130g taro, 130g cucumber, 130g carrot, 1 onion, 80g flour, 3T oil.


SEASONINGS:
1 tsp Kosher salt, some sugar.

PREPARATION :

1. Peel, rinse and drain taro; Julienne.
2. Peel, rinse and drain carrot; Cut off both ends; Julienne.
3. Peel, rinse and julienne onion.
4. Rinse cucumber; Cut off both ends; Rub each end with another end briefly; Rinse and drain; Julienne.
5. Add all the ingredients (except oil) in a big mixing bowl; Stir till well mixed.
6. Add 3T oil to a pan; Swirl the pan to evenly coat the pan with oil; Heat over a high heat; Turn to a low heat; Add the batter; Swirl the pan again; Cook over a low heat till slightly brown; Flip it over; Cook over a low heat till done; Turn off the heat; ]Arrange on a serving plate.
