FRIED FISH FILLET

INGREDIENTS :

390g fish fillet, 2 lemons, 1 cup of flour, 3 cups of oil.


SEASONINGS:
(1) 1 tsp. Kosher salt, 1 tsp. sugar, some ground black pepper.
(2) 1/2 tsp. Kosher salt, 1/2 tsp. sugar.

PREPARATION :

1. Rinse fish fillet and drain; Remove any bone with a pair of tweezers; Cut into pieces; Cut a lemon into halves; Evenly juice an half of the lemon over the fish pieces; Sprinkle seasoning (1) over the fish pieces; Leave it for 40 minutes.
2. Rinse a lemon and drain; Remove the peel; Chop the peel finely; Juice the flesh.
3. Pour flour into a flat plate.
4. Pour 3 cups of oil into deep pan; Bring to the boil over a high heat; Turn to a low heat; Dust each fish piece in the flour and carefully put into the oil; Turn to a high heat; Deep-fry over a high heat till golden brown; Lift the fried fish up and drain; Turn off the heat.
5. Cut the remaining half of the lemon into wedges.
6. Set the oil aside, leaving 1T oil in the pan. Heat over a medium heat; Turn to a low heat; Add seasoning (2), the lemon peel and 1.5T lemon juice; Cook till well mixed; Return the fried fish fillet to the pan; Cook till the fish fillet evenly coated with the sauce; Turn off the heat; Arrange on a serving plate; Garnish with the lemon wedges.
