500g fish fillet, 1 egg, 1 stalk of coriander, 1/2 onion, some lemongrass, 1 clove of garlic, 1 red chili pepper, 1 lemon, 2T oil, some flour.

(1) 1/2 tsp sugar, 1/2 tsp Kosher salt.
(2) 1 tsp chili powder, 1/2 tsp turmeric powder, 1/4 tsp fennel powder, 1/2T oil.


1. Rinse fish fillet; Remove any fine bones with a pair of tweezers; Mince and put into a mixing bowl; Marinate in seasoning (1).
2. Rinse lemon; Peel and chop the peel finely; Juice the flesh;
Add some lemon juice in the minced fish; Stir clockwise.
3.Rinse coriander and drain; Chop finely.
4. Peel, rinse and chop onion.
5. Rinse, seed and chop red chili pepper.
6. Rinse, drain, and chop lemongrass.
7. Peel, rinse and mince garlic.
8. Add seasoning (2), the coriander, the onion, the red chili pepper and the garlic to the minced fish; Stir clockwise till well mixed.
9. Scoop 1T minced fish into palm and press it into a round crepe with 7-cm diameter and set aside on a plate with some flour (repeat the step till the minced fish is used up).
10. Add 2T oil into a pan; Heat over a high heat; Turn to a low heat; Arrange the fish cakes the pan (leaving some space between the fish cakes); Pan-fry over a low heat till brown; Turn the cakes over and cook the other side till golden brown; Turn off the heat; Arrange on a serving plate.
