SAUTEED BEEF LIVER

INGREDIENTS :

200g beef liver, 240g beef bone, 3 cloves of garlic, 60g coriander, 2.5T oil, some rosemary, 2 cups of water.


SEASONINGS:
(1) some ground black pepper, 1 tsp. Kosher salt, some mustard seeds.
(2) 1T yellow mustard sauce, some Kosher salt.

PREPARATION :

1. Rinse beef bones and drain; Trim off any fat.
2. Add 1T oil to a pan; eat over a high heat; Add the beef bones; Briefly brown the bones; Turn off the heat; Set the bones aside.
3. Pour water into a pot; Bring to the boil over a high heat; Turn to a low heat; Add the beef bones; Bring to the boil over a high heat; Turn to a low heat; Cover the pot with its lid; Cook over a low heat for 2 hours; Turn off the heat.
4. Rinse beef liver; Soak in water for 2 hours; Lift the liver up, rinse and drain; Cut into cubes.
5. Peel, rinse and mince garlic.
6. Add seasoning(1) and the garlic into a mixing bowl; Mix well; Add the beef liver; Stir well so that the liver cubes are evenly coated.
7. Rinse and drain coriander; Chop most finely.
8. Rinse and drain rosemary.
9. Add 1.5T oil to a pan; Heat over a medium heat; Turn to a low heat; Add the beef liver; Pan-fry over a low heat for 1 minute; Set the liver aside; Add 4T beef broth from the step 3; Add the chopped coriander; Bring to the boil over a high heat; Turn to a low heat; Return the beef liver to the pan; Cook over a low heat for 5 minutes; Add seasoning (2); Cook over a high heat till the sauce has dried up (about 3 minutes); Turn off the heat; Arrange on a serving plate; Garnish with rosemary and the remaining coriander.
