1 bunch of fresh spinach
1 bunch of coriander
1 bunch of green onions
1 tablespoon of extra virgin olive oil
1/2 teaspoon of salt
1 teaspoon of freshly ground coriander seeds
1/8 teaspoon of cayenne pepper
1/4 teaspoon of black pepper
canola or vegetable oil
1 package of spring rolls


1. Wash the green onions, the spinach and coriander and finely chop.
2. Use a large bowl to combine the green vegetables, spices and olive oil and mix well.
3. Put the spring roll skins on a hard working surface and place a small portion of the filling in the center with a spoon. Dip one finger in some water and use the water to moisten the edges of the spring roll skin to close and seal. Form a triangle by folding the spring roll skin in half before sealing.
4. Put a small amount of cooking oil into the frying pan over medium heat and sauté for about 4-5 minutes. Add more oil as required.

Serve with yogurt sauce or coriander or tomato chutney.
